There is an old saying in Germany that “We are what we eat”; “Man ist, was Man isst” in German language, which means that our body is composed of what we consume. Namely, what we consume reflects majority of our well-being. According to modern scientific research, it certainly is true that biological aspects can’t be exempted from the factors that affect the one’s state of health. However, eating habits imitate one’s healthiness the most as there would be no one in disagreement with this fact. Recently, malnutrition, unbalanced diet, or excessive consumption of instant food, have created eating disorders, overweight, and other health related problems worldwide. Especially, heart vascular diseases, obesity, diabetes, and cancers are most seriously discussed.

Heart vascular diseases top the death-causing list in Europe and North America. Also, for the past 50 years, the major cause of changes in our dietary habits has been the increase in heart vascular disease. In Europe and North America, countless people die from the disease at their 40’s and 50’s. Also every year, almost half a million people die from the heart vascular diseases and $1 billion are being spent on victims of heart vascular disease and hardening of the arteries annually.

The arteriosclerosis (hardening of the arteries) is a solidification of the blood in the arteries, which could show initial symptoms at early age. The hardened arteries had been found that the blood vessels of American soldiers who died at Korean War at their early 20’s. However, this artery disease is very rare in Greenland. From the studies in 1970, not a single case of the artery hardening had been found among Mummannaq’s hunters in Greenland. Lately, as many aboriginals from Greenland immigrated to Denmark, adoption of Danish eating habits affected their health enormously that hardening of arteries has been started to occur among them that the ratio of the occurrence became as comparable to that of the Danish people. From this instance, biological factors did not influence low rate of artery diseases in Greenland people. That is to say, it is not a problem by the hereditary nature but a question of environmental factors and his recognition naturally led to the initialization of study of eating habits.

In 1908, from his research, Danish Dr. Krogh discovered that Greenland people consume meat products the most in the world. Dr. Bang and Dr. Dyerberg of Denmark once again confirmed Dr. Krogh’s findings in 1970’s and further learned that unsaturated fatty acids – OMEGA 3 – were integrated as part of Greenland’s eating habit and these substances were ingested from their consumption of seal and whale meats. The research continued as OMEGA 3, the unsaturated fatty acids, became to be known as the originator of Greenland’s low rate of arteriosclerosis.
